Late Summer Couscous

If you ever needed convincing that healthy food can be quick and delicious, then I give you couscous.

To make fluffy couscous all you need to do is put some dried couscous in a cereal bowl (fill to about a third). Then pour over boiling water to about a centimetre above the top of the couscous. Leave for 10 minutes. Fluff up with a fork.

To this, you can pretty much add anything. This week I added the following and we served it with some crumbled feta cheese and extra virgin olive oil:

Green beans
Peas
Toasted pine nuts
Chopped mint, chives and thyme
Lemon juice
