A Taste of the Sea – Mussels Made Easy

Serves 4

1.75kg mussels
Sesame oil
Fresh ginger
Turmeric root (or ground turmeric)
Chopped spring onions
  1. When buying mussels make sure as few of the shells as possible are open as these will likely have to be discarded. They should smell really fresh and like the sea. You can ask the fishmonger to clean the mussels, removing the barnacles and beards for you. To prepare, wash the mussels under a running cold water tap. Discard any open ones that don’t remain closed when pressed. You can remove the fibrous ‘beards’ and ¬†barnacles if your fishmonger hasn’t already.
  2. Heat a large wok or pan (that has a lid). When hot add sesame oil. Grate in some fresh ginger and turmeric (or add a tsp ground turmeric) and gently fry to release the aroma of the spices.
  3. Add the mussels and toss quickly for a few times. Add a generous splash of sake and a knob of butter. Cover and allow the mussels to open, giving the pan a shake every now and then.
  4. When the mussels are open, remove from the heat and let rest in their juices. Meanwhile, chop spring onions to garnish. Spoon the mussels and juices into bowls, add the spring onions and serve with sourdough.
