Red Lentil Soup – Cleanse Recipes

This soup is a taster from the 2-day Resolve Cleanse in our new book, The Ultimate Soup Cleanse.

The vegetables in this soup have diuretic properties so help resolve excess water in the body or ‘damp’ as Chinese medicine aptly describes it. The lentils give a nice amount of vegetable protein and so will help to keep you feeling fuller for longer. It’s a really simple cleanse recipe, the perfect start to a bit of healthy living.

Serves 2 (237 calories per portion)

1 leek
1 celery heart (keep outer part for stock)
1 fennel
1 tbsp olive oil
200ml hot vegetable stock
200g dried red lentils, thoroughly rinsed
1/2 preserved lemon, finely chopped

 

Chop the leek, celery and fennel into equally sized small cubes – a mirepoix. Heat the olive oil in a heavy-based pan and saute the vegetables for about 10 minutes, until soft.

Add the hot vegetable stock and lentils, bring to the boil, then reduce the heat to a simmer for about 20 minutes. Add the preserved lemon, stir through and then take the soup off the heat. If you can, allow the soup to heat overnight for he flavours to infuse. To serve, warm through and enjoy.
